creamy hummus

Ingredients

  • 1 cup dried chickpeas

  • Water (for soaking and boiling)

  • 1–2 cloves garlic, peeled

  • Juice of 1 lemon

  • 1/2 tsp salt (or to taste)

  • 1/4 cup tahini

  • 2–4 tbsp ice-cold water (adjust for creaminess)

  • Olive oil, for serving

  • Ground paprika, for garnish

  • Ground cumin, for garnish

  • Fresh cilantro, chopped, for garnish

How to?

  1. Soak the Chickpeas
    Place dried chickpeas in a large bowl and cover with plenty of water. Soak for 24 hours at room temperature.

  2. Cook the Chickpeas
    Drain and rinse the soaked chickpeas. Add them to a pot with fresh water and bring to a boil. Simmer until they are very soft and tender — this may take 1 to 1.5 hours. Drain and let cool slightly.

  3. Blend the Hummus
    In a food processor or high-powered blender, add the cooked chickpeas, garlic, lemon juice, salt, and tahini. Begin blending, then slowly add ice-cold water a tablespoon at a time, until the hummus becomes smooth and creamy.

  4. Serve
    Spoon the hummus onto a plate or bowl. Drizzle with olive oil and garnish with paprika, cumin, and chopped cilantro.
