creamy hummus
Ingredients
1 cup dried chickpeas
Water (for soaking and boiling)
1–2 cloves garlic, peeled
Juice of 1 lemon
1/2 tsp salt (or to taste)
1/4 cup tahini
2–4 tbsp ice-cold water (adjust for creaminess)
Olive oil, for serving
Ground paprika, for garnish
Ground cumin, for garnish
Fresh cilantro, chopped, for garnish
How to?
Soak the Chickpeas
Place dried chickpeas in a large bowl and cover with plenty of water. Soak for 24 hours at room temperature.Cook the Chickpeas
Drain and rinse the soaked chickpeas. Add them to a pot with fresh water and bring to a boil. Simmer until they are very soft and tender — this may take 1 to 1.5 hours. Drain and let cool slightly.Blend the Hummus
In a food processor or high-powered blender, add the cooked chickpeas, garlic, lemon juice, salt, and tahini. Begin blending, then slowly add ice-cold water a tablespoon at a time, until the hummus becomes smooth and creamy.Serve
Spoon the hummus onto a plate or bowl. Drizzle with olive oil and garnish with paprika, cumin, and chopped cilantro.
